1. How to Assemble Your Spring Rolls: A Step-by-Step Guide

Assembling spring rolls is an art that’s easy to master with a little practice. Think of it like rolling a delicate, translucent burrito!

What you’ll need:

  • A shallow dish or pie plate wider than your rice paper wrappers (a dinner plate works well for smaller wrappers)
  • Warm water (not hot, or it will make the wrappers too sticky too fast)
  • Your prepared ingredients, neatly arranged on a cutting board or platter for easy access.

Instructions:

  1. Prepare Your Station: Have all your desired fillings chopped and ready to go. Set up your dipping water dish next to your clean work surface (a large cutting board or a clean counter works well).
  2. Dip the Rice Paper: Take one sheet of rice paper. Submerge it completely into the warm water for about 15-20 seconds. The exact time can vary slightly depending on the brand and thickness of your rice paper. You’re looking for it to become pliable and flexible, but not soggy or sticky. It will continue to soften slightly after you remove it from the water.
    • Pro Tip: Don’t oversoak! If it feels too stiff when you pull it out, dip it for just a couple more seconds. If it’s too soft, it will be difficult to handle and may tear.
  3. Place on Work Surface: Carefully lift the softened rice paper from the water and lay it flat on your clean, damp (not soaking wet) work surface. Smooth out any wrinkles if needed, gently.
  4. Arrange Your Fillings: About one-third of the way up from the bottom edge of the circle (the edge closest to you), arrange a small, neat pile of your chosen fillings. Don’t overstuff! A common mistake is to add too much, which makes wrapping difficult. Start with just a tablespoon or two of each ingredient.
    • Tip for Presentation: If you’re using vibrant ingredients like cilantro or bell pepper strips and want them to show through the wrapper, place them directly onto the rice paper first, then layer the other ingredients on top.
  5. Start the Fold (Bottom): Take the bottom edge of the rice paper (the edge closest to you) and fold it up tightly over your mound of ingredients. Pull it snug to create a firm starting roll.
  6. Fold the Sides (Like a Burrito!): Now, take the left side of the rice paper and fold it inward over your filling. Repeat with the right side, folding it inward as well. You should now have an open-ended “packet” with the top portion of the rice paper still flat.
  7. Roll it Up (Top): Starting from the bottom (where you made your first fold), begin to tightly roll the entire spring roll upwards, away from you, towards the top edge of the rice paper. Maintain firm but gentle pressure to keep the roll tight and prevent gaps, but don’t press so hard that the wrapper tears.
  8. The Final Product: Continue rolling until you reach the end. You’ll have a beautifully wrapped, translucent spring roll, ready for dipping! Place it seam-side down on a serving platter.

Repeat the process for the remaining spring rolls, enjoying the satisfying rhythm of dipping, filling, and rolling!

2. Prepare the Creamy Peanut Dipping Sauce:

This sauce is the perfect accompaniment to your fresh spring rolls, offering a blend of savory, sweet, and tangy notes with a hint of spice.

Ingredients: (Yields 1 cup)

  • ½ cup natural peanut butter
  • 3 TBS gluten-free, low-sodium tamari or soy sauce
  • 3 TBS agave syrup
  • 2 TBS water
  • 1 small lime, juiced
  • ¾ tsp garlic powder (or 1 fresh clove)
  • ½ tsp red pepper flakes
  • 1 to 2-inch knob of fresh ginger, peeled (or ½ tsp ginger powder)
  • ½ TBS toasted sesame seeds

Instructions:

Combine all ingredients in a blender or food processor and blend until smooth and creamy. If the sauce is too thick, add water, a teaspoon at a time, until you reach your desired consistency. Garnish with additional red pepper flakes and sesame seeds if desired.
