Tomato Vinaigrette Salad Dressing:
1 Roma tomato (or tomatoes cut to similar size)
1 cup extra-virgin olive oil
1/3 cup red wine vinegar
1/4 cup lemon juice
1 TBS Dijon mustard
2 ÔÇô 3 TBS fresh basil (or 1/2 tsp dried)
2 cloves garlic
1/4 tsp black pepper
ItÔÇÖs easiest to mix dressing in a blender.
Then toss with veggies and top with poppy seeds.
Note: You could add nuts, beans and/or sprouts for a full meal salad.
